Both the 25 litre bucket and 5 litre demijohn come complete with tight fitting lids, pre-bored with holes and fitted with rubber grommets. The rubber grommets ensure that, when the airlocks are fitted into the lid holes, they create a tight seal. The two airlocks allow air out of the bucket and demijohn during fermentation without allowing fruit flies or contamination in. The red caps are designed to be loose fitting rather than airtight. Having a large bucket and 5 litre demijohn makes brewing from scratch far easier. Very often when you are making the equivalent of 6 bottles of wine, cider or mead, you include fruit or flowers in the first fermentation and then strain into the smaller vessel.
